Zucchini Bread
Zucchini Bread is an moderately easy dinner. Made with 4 eggs, 2 c. sugar, 1 c. vegetable oil, 3 1/2 c. flour and 1 1/2 tsp. soda, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
In large bowl, beat eggs; gradually beat in sugar, then oil. Combine dry ingredients and add to first mixture alternately with zucchini.
Stir in raisins, coarsely chopped nuts and vanilla. Pour into 2 greased and floured 9 x 5-inch pans.
Bake on lowest rack in oven 55 minutes at 350Β°.
Let stand 10 minutes to cool before removing from pans.
