Sift flour in large bowl.
Beat eggs and rest of ingredients to flour mixture; mix well, making sure all zucchini and flour is mixed well into batter.
Scrape bowl often and keep mixing for several minutes.
Pour into greased 9 x 5 x 3-inch loaf pans and bake at 350Β° for 1 hour and 20 minutes.
Let cool in pan on wire rack and store in plastic or in freezer paper and freeze.
This makes 2 loaves.
