Zucchini Bread
Zucchini Bread is an moderately easy dinner. Made with 3 beaten eggs, 2 c. sugar, 1 c. vegetable oil, 1 tbsp. vanilla and 2 c. loosely packed, no seed, coarsely grated zucchini, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Beat eggs until frothy.
Add sugar, oil and vanilla; beat until thick and lemon colored.
Stir in zucchini.
Sift flour with cinnamon, soda, salt and baking powder.
Add to zucchini mixture. Fold in walnuts.
Pour mixture into 2 oiled and floured loaf pans. Bake in preheated 350Β° oven for 1 hour or until a tester comes out clean.
Let cool in pans for 10 minutes.
Invert loaves on rack and cool completely.
