Zucchini Bread
Zucchini Bread is an moderately easy dinner. Made with 2 c. zucchini squash, grated, 4 large eggs, 2 c. sugar, 1 c. oil and 3 1/2 c. all-purpose flour, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Soak zucchini 1 1/2 hours in ice water; do not peel.
Beat eggs on high speed until thick.
Mix 3 1/4 cups flour; add other dry ingredients.
Dredge raisins and nuts with remaining 1/4 cup flour.
Mix into eggs on low speed, fold in other ingredients. Add vanilla.
Grease 2 loaf pans, 9 x 5 x 3 1/2-inch.
Line with wax paper.
Bake in middle of a 350Β° oven for 55 to 60 minutes. Freezes well.
