Zucchini Bisque
A silky chilled or warm soup of shredded zucchini softened in butter, finished with chicken stock, light cream, basil and a hint of nutmeg. Mild, velvety and gently herbed.

π¨βπ³ Instructions
Saute onion and butter or margarine.
Simmer zucchini and chicken stock for 15 minutes (covered).
PurΓ©e 1/2 of zucchini mixture with 1/2 of onion mixture while slowly adding cream and spices.
(Repeat with other half.)
Serve hot or cold.
Also great with cauliflower.
