Zeppole
Zeppole is an moderately easy dinner. Made with 2 eggs, 1 c. flour, 2 tsp. baking powder, 1 pinch of salt and 1 1/2 tsp. sugar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Beat eggs slightly.
Add remainder of ingredients and beat gently until combined batter becomes sticky.
Drop by half teaspoon (push off batter with another spoon) into deep corn oil; heat to 375Β°, frying a few at a time, until Zeppole are golden brown, about 3 minutes.
Drain on brown paper and roll in confectioners sugar.
Serve at once.
