Yellow Squash Pickles
Yellow Squash Pickles is an moderately easy dinner. Made with 8 c. yellow squash, sliced 1/2 inch thick, 1 tbsp. pickling spice, 2 c. chopped onion, 1/4 c. chopped green pepper and 1 large can pimento, this recipe delivers authentic, satisfying flavors. Wash and slice squash.
Sprinkle with salt and set aside for 1 hour.
Bring vinegar and sugar to a boil.
Add squash, onion, green pepper and pimento; bring to a boil again.
Pack in jars.
Add mustard and celery seed to remaining juice in pan and boil.
Pour into jars.
Seal and process in hot water bath for 10 minutes.
