Yellow Squash Muffins
Yellow Squash Muffins is an moderately easy dinner. Made with 2 lb. squash (about 8 medium), 2 eggs, 1 c. butter, melted, 1 c. sugar and 3 c. flour, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Cut squash in 1-inch slices.
Cook 15 or 20 minutes, until tender.
Drain well and mash.
Measure 2 cups.
Combine with eggs and butter; mix.
Combine remaining ingredients in large bowl. Make a well in center of flour mixture.
Add squash mixture, stirring until moistened.
Spoon into greased muffin tins 3/4 full. Bake at 375Β° for 20 minutes.
Makes 1 1/2 dozen.
