Yellow Squash Casserole
Yellow Squash Casserole is an moderately easy dinner. Made with 2 lb. yellow squash (2 c. cooked), salt and pepper to taste, 1 can cream of chicken soup, 2 oz. jar pimento and 2 carrots, grated, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cook and drain squash.
Add salt and pepper to taste and mash.
Combine soup, pimento, carrots, onion and sour cream.
Add to squash.
Pour melted butter over bread crumbs.
Alter layers of squash mixture and bread crumbs, ending with bread crumbs on top. Bake in 350Β° oven 30 minutes.
It should be bubbly.
Serves 6 to 8.
