Yankee Potato Salad
Yankee Potato Salad is an moderately easy dinner. Made with 4 lb. small red potatoes, 1/2 lb. chopped bacon, 2 medium chopped onions, 2 c. warm water and 1 c. sugar, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Brown bacon lightly.
Add onions; saute slightly.
In another pan, put the warm water, sugar and vinegar.
Heat and make paste out of the flour; add to mixture and stir until thick.
Add bacon and onion; stir well.
Pour over sliced potatoes; refrigerate overnight.
Bake the next day in a 325Β° oven for 45 minutes to 1 hour.
