Wilted Spinach Salad
Wilted Spinach Salad is an moderately easy dinner. Made with 5 slices bacon, 5 oz. fresh spinach, bite size pieces, 1 c. fresh mushrooms, sliced, 1 c. cherry tomatoes, quartered and 1/4 c. red onion, chopped, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cook bacon until crisp.
Drain, then crumble. Reserve 2 tablespoons bacon drippings.
Combine spinach, mushrooms, tomatoes and onion in large mixing bowl. Combine vinegar, sugar, salt, pepper, mustard, drippings and
2 tablespoons water in saucepan. Heat to just boiling. Pour dressing over salad. Toss lightly.
Garnish with bacon. Serve immediately.
