Wild Rice Soup
Wild Rice Soup is an impressive soup you can prepare in about 1 hour 48 minutes. Made with gal. cream base, qt. cream or half and half for thinning, c. dry sherry, bacon, chopped and large onion, chopped, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Make cream base with butter, flour and 2 quarts cream or half and half.
Cook wild rice according to directions.
Cook bacon until crisp; drain and add to cream base.
Saute onion, celery, peppers, tomatoes, carrots and garlic in butter.
Add to cream base.
Saute mushrooms in butter and sherry; add to cream base. Season with seasoning salt and white pepper.
Add cream or half and half to thin.
Heat to serving temperature, but don't boil.
Add rice just before serving.
Makes 20 servings.
