Wild Rice Soup
Wild Rice Soup is an moderately easy dinner. Made with 2 tbsp. butter, 1 tbsp. onion, 1/4 c. flour, 4 c. chicken broth and 2 c. cooked wild rice, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Saute butter and onion until tender.
Blend in flour. Gradually add chicken broth and cook until it thickens slightly. Stir in wild rice and salt.
Simmer 5 minutes.
Blend in half and half and sherry.
Heat to serving temperature.
Add meat and carrots at this time, if desired.
Mushrooms, water chestnuts or chopped bacon may also be added at this time.
Top with sliced almonds, if desired.
Serves 4.
