Wild Rice Salad
Wild Rice Salad is an moderately easy dinner. Made with 1 c. uncooked wild rice, seasoned salt (optional), 2 c. diced, cooked chicken, 1 1/2 c. halved green grapes and 1 c. sliced water chestnuts, drained, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cook rice (with seasoned salt, if desired).
Drain well and cool to room temperature.
Place in a large bowl.
Add chicken, grapes, water chestnuts and mayonnaise.
Toss gently with a fork. Cover and chill.
Just before serving, add cashews, if desired. Serve on lettuce leaves or line bowl with lettuce leaves.
Yields 6 servings.
