Wild Rice Casserole
Wild Rice Casserole is an moderately easy dinner. Made with 1 c. rice, 3 c. boiling water, 1 1/2 cans mushroom soup, 2 tbsp. finely chopped onion and 1/2 c. sour cream, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Wash 1 cup wild rice thoroughly and place in a large heavy saucepan filled with 3 cups boiling water and salted to taste. Reduce heat to simmer, cover and cook rice 50 to 60 minutes or until rice kernels puff open. Uncover and fluff rice with a table fork.
Simmer an additional 5 minutes.
Drain off any excess liquid and proceed with recipe.
