"Wild Bill's" Deer Gumbo
"Wild Bill'S" Deer Gumbo is an impressive dinner. Made with 1 c. flour, 1 c. oil, 3 c. chopped onions, 2 c. chopped celery and 1 c. chopped bell pepper, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
To form roux, mix flour and oil; cook on low heat until dark brown.
Boil venison until tender.
Saute onions, pepper and celery in butter until tender.
Combine roux, venison, vegetables, spices, tomatoes, water and beef broth in large pot.
Bring to boil, then simmer 1 hour, stirring regularly.
Add Cajun seasoning to taste.
Serve over rice.
