Spread one side beef with mustard.
Stir together all seasonings with yogurt; spread over steak.
Roll up tightly.
Lay on foil lined mast pan; cover tightly and chill 24 to 48 hours. Preheat oven to 350Β°.
Remove meat from refrigerator; uncover and pour wine or juice over all.
Cover with foil and bake 1 hour. Uncover; baste 2 to 3 times during baking.
Recover each time. Finally, uncover; bake, uncovered, until fork-tender.
