Welsh Rarebit
Welsh Rarebit is an moderately easy dinner. Made with 1 tbsp. butter, 2 c. diced sharp cheddar cheese, 1/2 tsp. salt, 1/4 tsp. dry mustard and a few grains cayenne, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Stir Cheddar cheese in butter and melt slowly.
Add salt, dry mustard, cayenne and Worcestershire sauce.
Stir in slowly the evaporated milk with water.
Remove from heat and beat in egg yolk.
Serve at once over hot buttered toast.
