Warm Mushroom Salad
Warm Mushroom Salad is an moderately easy dinner. Made with 1 pkg. (10 oz.) mushrooms, 1 red pepper, cut into 1-inch chunks, 3 tbsp. vegetable oil, 1/2 of (10 oz.) pkg. spinach leaves and 2 tbsp. red wine vinegar, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Rinse mushrooms and dry.
Cut each in half.
In a large skillet, saute mushrooms and pepper in oil 6 minutes until vegetables are lightly browned and tender.
Meanwhile, remove and discard stems from spinach; wash and dry well.
Place in serving bowl; stir vinegar and mustard into skillet.
Bring mixture to a boil.
Toss with spinach.
