Viola's Baked Fish
Viola'S Baked Fish is an moderately easy dinner. Made with 8 medium potatoes, 3 large onions, 1/2 c. chopped bell pepper, 1 pt. tomatoes and 6 pieces bacon, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Quarter potatoes and onions.
Cook for 30 minutes in pot of water.
Roll fish in butter, salt and pepper.
Place skin down in baking pan.
Put bacon on fish.
With slotted spoon, put potatoes and onion on and around fish.
Pour canned tomatoes on top.
Then add bell pepper.
Pour some of juice from potatoes and onion on fish until almost covered.
Cook in oven for 30 minutes at 350Β°.
