Vermicelli Soup
Vermicelli Soup is an moderately easy dinner. Made with 2/3 c. vermicelli or similar thin-strand pasta, broken into 1 to 2 inch pieces, 3 tbsp. vegetable oil, 1/2 medium onion, chopped, 2 cloves garlic, minced or pressed and 8 1/2 oz. can peas and carrots, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Brown vermicelli in oil.
Add onion and garlic; saute until onion is tender.
Add remaining ingredients except parsley and bring to a boil.
Reduce heat, cover and simmer 10 minutes. Garnish with parsley.
