Vegetable Pita Melt
Vegetable Pita Melt is an moderately easy dinner. Made with 1/4 c. broccoli, 1/4 c. cauliflower, 2 tbsp. sliced green onion, 2 tbsp. sliced tomatoes and 1 1/2 tsp. buttermilk salad dressing, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Blanch broccoli and cauliflower.
In a small mixing bowl combine all ingredients except pita and cheese, mixing well until thoroughly coated.
Cut pita in half crosswise, making 2 halves. Open each half to form a pocket.
Fill each pita half with half of the vegetable mixture and then with 1/2 ounce cheese.
Set pita halves on paper plate and microwave on High for 40 seconds.
Makes 1 serving.
May be increased.
