Vegetable Okra Gumbo
Vegetable Okra Gumbo is an moderately easy dinner. Made with 3 or 4 slices bacon, fried crisp, 1 medium onion, chopped, 1/2 bell pepper, seeded and chopped, 5 c. okra, cut in 1-inch pieces and 2 c. canned tomatoes (or fresh tomatoes, peeled and diced), this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
In a large skillet fry bacon crisp, then remove.
Add chopped onion, pepper and okra to bacon grease.
Cook 15 minutes until okra is slightly browned.
Add tomatoes and bacon (broken up in 1-inch pieces), sugar, salt and pepper.
Cover skillet and simmer 15 minutes.
Gumbo should have consistency of stewed tomatoes.
