Vegetable Medley
Vegetable Medley is an moderately easy dinner. Made with 4 small yellow squash, sliced, 2 medium zucchini, sliced, 2 small onions, sliced and separated into rings, 1/2 c. water and 2 tomatoes, sliced, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Combine first 4 ingredients in a skillet with a lid; bring to a boil.
Cover; reduce heat and simmer 3 to 4 minutes.
Add tomatoes, salt, basil and thyme and toss gently.
Cover and simmer 2 minutes.
Sprinkle with Parmesan cheese.
Serve immediately.
