Vegetable Medley
Vegetable Medley is an moderately easy dinner. Made with 1/2 c. (1 stick) butter or margarine, 2 c. (1/2 lb.) sliced zucchini, 1 c. chopped green pepper, 1 c. coarse bread crumbs and 3 medium tomatoes, sliced, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

In skillet, melt butter.
Add zucchini, green pepper and celery.
Stir in eggplant and salt.
Remove vegetables (leaving butter in skillet) and put into casserole dish.
Add crumbs to butter.
Top vegetables with tomatoes and bread crumbs.
Bake at 350Β° for 30 minutes.
