Vegetable Medley
Vegetable Medley is an moderately easy dinner. Made with 1/4 c. sliced green onions, 2 tbsp. butter or margarine, 1 can (14 1/2 oz.) stewed tomatoes, 1 tbsp. cornstarch and dash of thyme, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

In a medium saucepan, saute onions in butter.
Add tomatoes, cornstarch, thyme and pepper; stir until cornstarch is dissolved. Cook, stirring constantly, until thickened and translucent.
Add peas; heat through.
Serve sauce over omelet, hamburger or use as a side dish.
