Vegetable Medley
Vegetable Medley is an moderately easy dinner. Made with 1 1/2 c. fresh green beans (can substitute canned), 2 carrots, cut crosswise into halves, then into strips, 1 medium onion, cut into 1/4-inch slices, 3 c. sliced fresh mushrooms and 1/4 c. butter, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Hollow out 4 tomatoes and fill with
1 cup Cheddar cheese, 1 cup bread crumbs, minced onion, minced parsley, nutmeg and melted butter to moisten.
Sprinkle salt on top and put tops of tomatoes back on and bake in oven at 350Β° until done.
