Vegetable Medley
Vegetable Medley is an moderately easy dinner. Made with 1/2 c. water, 2 tbsp. butter or margarine, 1/2 tsp. salt, 1/4 tsp. pepper and 1/8 tsp. garlic powder, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Combine the first five ingredients in a Dutch oven.
Bring to a boil.
Add carrots.
Cover, reduce heat and simmer 5 minutes. Add pepper, onion, yellow squash and zucchini.
Cover and simmer 10 minutes.
Stir in mushrooms; cover and simmer 5 more minutes. Drain.
Place vegetables in lightly greased 13 x 9 x 2-inch baking dish.
Sprinkle with cheese.
Broil just until cheese melts. Yields 8 servings.
