Vegetable Cassoulet
Vegetable Cassoulet is an impressive dinner. Made with 4 carrots, sliced, 2 potatoes (or rutabagas), sliced, 1 onion, sliced, 3 cloves of garlic, minced and 1/2 tsp. basil, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Preheat oven to 350Β°. Coat large casserole with cooking spray.
Add carrots, potatoes, onion and garlic; saute 5 minutes.
Add herbs, tofu, salt if desired and beans.
Add enough broth or water to cover, about 2 cups.
Cover and bake 45 minutes; garnish with chopped scallions.
