Vegetable Casserole
Vegetable Casserole is an moderately easy dinner. Made with 1 can french-style green beans, drained, 1 can shoe peg corn, drained, 1 can cream of celery soup, 1/2 c. grated cheese and 1/2 c. chopped celery, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Mix all ingredients together (very small amount of salt, if desired); put in oblong 2-quart casserole dish.
Melt 1 stick butter and mix with 1 stack crushed Ritz crackers.
Top vegetable mixture with the buttered crackers and bake at 325Β° for approximately 45 minutes.
This is good made the night before and refrigerated.
Fix the cracker mix just before baking.
It also freezes well without the cracker topping.
Serves about 8.
