Veal Meat Loaf
Veal Meat Loaf is an moderately easy dinner. Made with 2 tbsp. olive oil, 1/2 medium onion, diced, 1 stalk celery, diced, 1 carrot, peeled and shredded and 1 lb. ground veal, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Preheat oven to 400Β°.
Heat oil in frying pan and add the onion.
Saute for 3 minutes and add the celery and carrot.
Saute for five minutes over medium-high heat.
Mix the vegetables into the ground veal.
Add the parsley, bread crumbs, nutmeg, eggs, salt and pepper.
Mix well.
Lightly oil a baking dish.
Divide mixture into small individual loaves.
Place in baking dish and bake for 15 to 20 minutes.
