Van's Mexican Casserole
Van'S Mexican Casserole is an moderately easy dinner. Made with 1 1/2 lb. ground beef, 1 medium onion, chopped, 1 can ro-tel tomatoes, 1 can cream of mushroom soup and 1 can pinto beans, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
In saucepan, melt cheese along with Ro-Tel tomatoes.
Brown ground beef with onion; drain.
To beef, add cheese mixture, bean and soup.
In baking dish, cover bottom with chips.
Pour mixture over chips.
Bake at 350Β° for 15 minutes.
Top with sour cream, grated cheese, lettuce, black olives and green onions, if you like.
