Uncooked Relish
Uncooked Relish is an moderately easy dinner. Made with 1 gal. ripe tomatoes, skinned, 4 large onions, 3 green sweet peppers, 1 pt. vinegar and 2 c. sugar, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Grind tomatoes, onions and green peppers.
Add 1 cup salt and let set overnight.
Next morning, drain out all liquid through a cloth bag.
To the pulp, add the vinegar, sugar, mustard seed and celery seed.
Pack in jars of any size you like.
Close tight but you can't seal since it is cold.
This will keep indefinitely.
