Unbelievable Peanut Butter Cookies is an easy dinner. Made with 1 c. creamy peanut butter, 1 egg, 1 c. sugar and 1 tsp. vanilla extract, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Preheat oven to 300Β°.
In medium bowl, combine all ingredients. With electric mixer at medium speed, beat until smooth and blended. Using hands, roll dough into balls, about 1-inch in diameter. Place 1-inch apart on ungreased cookie sheets (they do not spread). Pat with fork.
Bake 15 to 20 minutes or until firm and a light brown.
Cool completely on wire racks.
Store in a tightly covered container.
Makes 24 cookies.
