Unbaked Pineapple Cheesecake
Unbaked Pineapple Cheesecake is an moderately easy dinner. Made with 2 1/2 c. graham cracker crumbs, 1/2 c. margarine, melted, 1 (20 oz.) can crushed pineapple, 1 (3 oz.) pkg. lemon jell-o and 3 tbsp. lemon juice, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cream the cheese and sugar well.
Drain pineapple well, heat juice and dissolve Jell-O in it.
Chill the Jell-O mixture until the consistency of egg whites.
Put with the cheese mixture.
Add lemon juice.
Stir in Cool Whip.
Save 1/2 cup crumbs.
Press the rest in a 13 x 9-inch dish.
Pour in mixture and top with 1/2 cup crumbs.
Chill well.
