Turkey Soup
Turkey Soup is an impressive dinner. Made with 1 turkey carcass, 3 qt. water, 2 (10 1/2 oz. each) cans low-sodium chicken broth, 1/2 c. uncooked long grain rice and 1 medium onion, finely chopped, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Place turkey carcass and water in a large soup kettle.
Simmer over low heat for 4 to 5 hours.
Remove carcass from stock. Remove any meat and dice.
Return to stock along with rice, onion, celery, carrots, bay leaf and poultry seasoning.
Add remaining seasonings to taste.
Simmer over medium-low heat until the rice is cooked.
Yield: 8 servings (3-quarts).
