Turkey Parmigiana
Turkey Parmigiana is an moderately easy dinner. Made with 2/3 c. dry whole wheat bread crumbs (1 1/2 slices bread), 3 tbsp. grated parmesan cheese, 1 lb. turkey cutlets, 1/4 c. skim milk and 1 tsp. oil, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Combine crumbs and 2 tablespoons cheese.
Dip cutlets in milk and dredge in crumb mixture.
Heat nonstick skillet to medium-high.
Add 1 teaspoon oil and cook cutlets about 3 minutes on each side, adding up to 1 more teaspoon oil, if necessary. Remove cutlets to warm platter.
Heat tomato sauce and seasonings. Pour over cutlets.
Sprinkle with remaining 1 tablespoon cheese and serve on a bed of noodles.
