"Tropical Carrot Cake"
"Tropical Carrot Cake" is an moderately easy dinner. Made with 2 tsp. baking soda, 2 tsp. cinnamon, 2 c. whole wheat flour, 1 c. vegetable oil (or preference) and 1 1/4 c. fructose or 8 pkg. sweet 'n low, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Mix together baking soda, cinnamon and flour.
Cream together the oil and fructose (or whatever sweetener desired).
Beat in the eggs one at a time.
Add vanilla.
Beat in flour mixture.
Stir in the carrots, raisins, coconut and nuts.
Bake in a greased 13 x 9 x 2-inch pan at 350Β° for 25 to 30 minutes until lightly browned or until an inserted toothpick comes out clean.
