Top O' the Stove Scallop
Top O' The Stove Scallop is an moderately easy dinner. Made with 4 c. thinly sliced potatoes, 2 c. diced, cooked ham or spam, 1 can celery soup (undiluted), 1/2 c. water and 2 tbsp. finely cut onions, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Put in heavy skillet the potatoes and ham.
Add soup, water, onions, salt and pepper.
Cover and cook over low heat, turning now and then for about 25 minutes.
Remove cover and cook 10 minutes longer, then pour 1/2 cup evaporated milk over the top.
Heat until steaming hot, but do not boil.
Serves 4 to 6.
