Tomato Casserole
Tomato Casserole is an moderately easy dinner. Made with 1 1/2 c. onion and garlic croutons, 3 medium size ripe tomatoes (1 lb.), sliced in 1/4-inch thick rounds, 6 oz. mozzarella cheese, cut in thin slices, 2 tbsp. chopped fresh basil and 1 tbsp. snipped chives (optional), this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Scatter croutons over bottom of a 9-inch glass pie plate. Overlap alternate slices of tomatoes and Mozzarella cheese on top in a circular pattern to cover.
Sprinkle with basil, chives and pepper.
Microwave, uncovered, on High for 3 1/2 to 4 1/2 minutes or until cheese is melted.
Remove from oven; spoon dressing on top.
Let stand 5 minutes for flavors to develop.
