Tomato and Cheese Macaroni
Tomato And Cheese Macaroni is an moderately easy dinner. Made with 2 c. macaroni, uncooked, 1/2 c. chopped onion, 1 lb. can tomatoes, 1/2 tsp. salt and 1 c. sour cream, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cook macaroni in boiling, salted water until barely done. Drain and set aside.
In large skillet, saute chopped onion in 3 tablespoons butter.
Add the tomatoes with liquid, oregano, salt and pepper to taste.
Cook over medium heat about 10 minutes, breaking up tomatoes.
Add cooked macaroni, sour cream and Cheddar.
Mix well.
Pour into baking dish and top with 2 tablespoons butter and Parmesan cheese.
Bake in preheated 350Β° oven for 25 minutes.
