Thai Cucumber Salad
Thai Cucumber Salad is an moderately easy dinner. Made with 2 firm cucumbers, 1 tbsp. shredded fresh red chili, 1/4 c. sugar, 5 tbsp. white vinegar and chopped onion to taste, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Trim ends of cucumbers and scrape with fork to make a decorative pattern.
Quarter the cucumbers lengthwise and remove seeds.
Cut them crosswise into thin slices.
Put in bowl and add chili.
In small saucepan, combine sugar and vinegar; bring to boil.
Cook, stirring, until the sugar has dissolved.
Cool to room temperature and pour sauce over the cucumber mixture.
Chill and sprinkle with cilantro.
Serves 4.
