Taco Topped Potatoes
Taco Topped Potatoes is an moderately easy dinner. Made with 4 large baking potatoes, 1 lb. ground beef, 1/2 c. chopped onion, 1 (1 1/4 oz.) pkg. taco seasoning mix and 3/4 c. water, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Scrub potatoes; prick several times with fork.
Microwave until done; let stand 2 minutes.
Brown the ground beef and onion in a large skillet, stirring until beef crumbles; drain.
Stir in seasoning mixture and water; bring to a boil.
Reduce heat; simmer, stirring occasionally, for 15 minutes, or until liquid evaporates.
Stir in taco sauce; cook until thoroughly heated. Cut an "X" to within 1/2-inch of bottom of each potato.
Squeeze potatoes from opposite sides and ends to open.
Fluff potato pulp with fork.
