Sweet Refrigerator Pickles
Sweet Refrigerator Pickles is an moderately easy dinner. Made with 6 to 8 medium cucumbers (unpeeled), 1 green or red pepper, seeded and chopped, 2 c. mild cider vinegar, 2 c. sugar and 1/2 tsp. allspice, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Select young firm cucumbers.
Slice into even slices.
Place in a large bowl.
Bring vinegar, sugar, spices and salt to a boil. Boil 1 minute.
Immediately pour over cucumbers.
Pack in hot sterilized jars.
Cover and cool.
Refrigerate 1 week before using. Pickles may also be processed if you wish to keep them longer but they will keep a long time in the refrigerator.
Makes 3 to 4 pints.
