Sweet Potato Surprise
Sweet Potato Surprise is an moderately easy dinner. Made with 1 (1 lb. 1 oz.) can whole sweet potatoes, 1 1/2 c. brown sugar, 1/4 tsp. salt, 1 1/2 tbsp. cornstarch and 1/8 tsp. cinnamon, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Place sweet potatoes, halved lengthwise, in greased 10 x 6 x 1 1/2-inch baking dish.
In saucepan, combine brown sugar, cornstarch, salt, cinnamon and orange peel.
Drain apricots; reserve syrup.
Stir 1 cup apricot syrup into cornstarch mixture. Cook and stir over medium heat until boiling.
Boil 2 minutes. Add butter.
Add apricots and pecan halves over sweet potatoes. Pour syrup mixture over all and bake in 375Β° oven, uncovered, for 25 minutes.
Serves 6.
