Sweet Potato Pie
Sweet Potato Pie is an moderately easy dinner. Made with 1 unbaked pie shell, 1/2 lb. fresh sweet potatoes, boiled, drained and peeled, 3/4 c. packed dark brown sugar, 1/4 c. butter or margarine, at room temperature and 3 large eggs, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Heat oven to 425°.
Press bottom and sides of unbaked shell with fork.
Bake 8 to 10 minutes until dry.
Remove to rack.
Put potatoes in medium bowl.
Break up with electric mixer; add sugar and butter.
Beat until well blended and smooth.
Add remaining ingredients.
Spread in pans.
Bake 10 minutes.
Reduce oven to 325°.
Bake 40 to 45 minutes until pick comes out clean.
Cool in pan or on wire rack.
