Wash and bake sweet potatoes until almost fork-tender (about 45 to 50 minutes).
Cool.
Scoop potatoes out of skins and mash, there should be about 2 cups.

Pour into pie shell.
Bake at 350Β° until knife inserted in center comes out clean (50 minutes). Garnish with whipped cream.
