Sweet Potato Pie
Sweet Potato Pie is an moderately easy dinner. Made with 3 large sweet potatoes, 2 eggs, beaten, 1/2 c. canned evaporated milk (more, if needed), 1/2 tsp. cinnamon and dash of mace (all spices are added to taste), this recipe delivers authentic, satisfying flavors. Preheat oven to 350°.
Boil sweet potatoes until tender.
Peel and mash.
Then beat with electric hand mixer until smooth and fluffy.
Add beaten eggs, sugar, milk, melted butter and spices. Mix well. Pour into pie shell and bake at 350° for 30 to 45 minutes, checking for doneness or until toothpick inserted in center comes out clean.
