Sweet Potato Pecan Pie
Sweet Potato Pecan Pie is an moderately easy dinner. Made with 2 c. cooked mashed sweet potatoes, 7 tbsp. melted butter, divided, 1/2 c. heavy cream, 3/4 c. firmly packed brown sugar and 2 eggs, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Preheat oven to 375°.
In food processor or blender, purée sweet potatoes with 3 tablespoons melted butter until smooth.
Add cream, brown sugar, eggs, vanilla extract, pumpkin pie spice and brandy.
Process until mixture is well combined.
Spoon evenly into unbaked pie crust.
Bake 20 minutes until filling is almost set.
