Sweet Potato Loaf Cake
Sweet Potato Loaf Cake is an impressive dinner. Made with 2/3 c. butter or shortening, 2 c. sugar, 1 c. sweet potatoes, mashed, 4 eggs, beaten separately and 2 c. sifted cake flour, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Sift 1 1/2 cups flour with other dry ingredients three times. Dust raisins and nuts with other 1/2 cup flour.
Cream butter and sugar.
Add potatoes and then egg yolks.
Add flour mixture and 1/2 cup milk.
Stir in nuts and raisins.
Fold in beaten egg whites. Bake in a 350Β° oven for 50 to 60 minutes.
